When Camellia Panjabi opened this restaurant decades ago, it was the first Indian restaurant in the Taj group not to serve naan or other North Indian breads but to focus on authentic South Indian coastal food, based on recipes sourced from private houses. Over the years, though Panjabi has moved on, the restaurant has stuck to those principles: ideas that have now been widely copied. But Karavalli is still where it all began.
