“This may be the most unfancy restaurant to ever get stars in these ratings. A small, hole in the wall near the Golden Temple, it has a tiny kitchen in its mezzanine and the world-beating kulchas have to be lowered to the ground floor in a bucket tied to a rope.
But it’s worth it because the kulchas are unmatched: crisp on the outside with layers of flavour inside and such classic stuffings as aloo and gobhi.”
