A passion project by Chef Vanika Choudhary, Noon distinguishes itself in Mumbai’s culinary landscape for its unwavering commitment to fermentation, foraging, and the sourcing of sustainable produce. Inspired by the chef’s experiences growing up in Jammu and Kashmir, Noon’s tasting menu experiments with hyper-local ingredients prepared using ancient traditions and techniques. Unusual but flavorful dishes include Himalayan Trout Marinated in Pumpkin Kasundi, Morels with Millet Miso, and a Bhakarwadi sandwich filled with Miso ice-cream.
