The first upmarket restaurant in India to serve a version of the Nobu menu under the watchful eye of Masaharu Morimoto who had been Executive Chef at the first New York Nobu. Morimoto is less involved now but the chefs at the Taj have found their own feet and though standards have varied over the years, the kitchen team is currently at its peak, led by the skilled Chef Shimomura Kazuya.
