Manisha Bhasin started running kitchens based on the principles of sustainability long before sustainability became a buzz word. As Executive Chef she emphasised energy efficiency, recycling and green practices. She advocated the use of local ingredients when other chefs were still looking for imports. 

The quality of her food demonstrated that implementing sustainability led to no drop in flavour: in fact, the opposite is true. Now, as the first woman to become Corporate Chef of a major hotel chain, she spearheads more green initiatives.
