Urbano Do Rego was working in the main kitchen at the Mumbai Taj in the 1970s when the group sent him to his native Goa to work out how to serve traditional Goan dishes on a hotel menu. Chef Rego not only invented the Goan menu as we know it today, he also created the standard recipes for Goan dishes that are still used by restaurants today. More than any other individual he helped turn the rustic dishes of Goa’s villages into a cuisine that is now popular all over the world. He is not just the greatest and most influential Goan chef, he is also the father of the Goan cuisine served at hotels and restaurants today.
