Julia Carmen Desa started her career in her native Goa at the Taj Aguada cooking Italian food. Then she chose to specialize in Goan cuisine. In no time at all, she became one of the country’s top Goan chefs travelling to foreign capitals with the Prime Minister. She then returned to European food, opening Zest in Delhi before launching her own Tres. Though Tres has an all European menu, Julia intends to return to the food of Goa, her first love.
